This blueberry cream cheese spread recipe is the perfect summer treat. It’s awesome on it’s own, but you can spread it on your favorite bagel or cracker and enjoy it any time of the day. I prefer it on blueberry bagels when I’m not eating it straight out of the bowl.
I love blueberries, especially when they are in season; which is why I used a lot of them in this recipe. It results in a nice and rich blueberry cream cheese spread. It’s a bit runny, but I like to eat mine straight from the bowl, so it works out good for me. At the same time, it’s not too runny to spread onto your favorite bagel or crackers.
With that said, if you’re not as keen on blueberries as I am, you can always reduce the amount to one cup of blueberries.
Another ingredient that always makes my day is vanilla. I like to put it into anything and everything, including into this spread. If it’s not your thing, feel free to omit it.
As for honey, I generally omit it as the blueberries are sweet enough on their own. However, sometimes you get those really small and sour blueberries that make your face cringe. And that’s when I like to add a bit of sweetness to help take that away.
The best part about this cream cheese spread is that it’s not only delicious, but it’s healthy too! Blueberries contain a lot of anti-oxidants, which help to move all the bad stuff out of your system.
The only bad part about this is that cream cheese contains a lot of fat and not a whole lot of any essential nutrients. But, fat in moderation is good for you. And with all the blueberries in here you actually don’t get that much fat in one serving if you’re only spreading in on your bagels or crackers.
So you can enjoy this as a healthy snack without feeling any guilt.
Blueberry Cream Cheese Spread
For this recipe you will need a small food processor. And instead of using only blueberries, feel free to add or use other berries, such as raspberries and strawberries, to bring out a different flavor.
- 2 cups blueberries
- 227 g plain cream cheese
- 1/2 tbsp honey (optional)
- 1/2 tsp vanilla extract (optional)
Add all ingredients to a food processor and mix until smooth and creamy. If you have a small processor you may have to process the blueberries down a bit to make room for the cream cheese.
Best if consumed right away. But you can store it in fridge in an air-tight container for about a day.
Use only 1 cup of blueberries for a nice thick and creamy spread.
