Iceberg Lettuce Salad

Depending on how fast you can chop and dice your vegetables, this tasty iceberg lettuce salad can be fixed in as little as 20 minutes or even less. Enjoy it with your favorite mashed potatoes and meat dish, or any other meal that you like. It’s perfect on it’s own as a snack in between meals as well.

This recipe makes a LOT, which makes it great for summer barbecues, potlucks and large family dinners. And it goes with just about anything and everything else that is brought to the table.

It’s also perfect for making ahead for something quick during the week. The only thing is that the lettuce wilts easy, so you might want to chop and store all vegetables in separate containers. Then simply mix together desired amounts when you are ready to sit down and eat.

Sliced Olives

Use either green or black olives.I used green … and a whole cup of em! If you’re not a huge fan of olives you can always go less. But I enjoy taste, especially in salads.

Camu Dried Cranberries

The camu dried cranberries are simply regular cranberries with camu powder. Thus, they are a darker shade and more nutritious. However, regular dried cranberries are just as good here. And together with the olives and sea salt, they eliminate the need for a dressing. But, you can always add a light dressing if you so choose.

Iceberg Lettuce Salad Recipe

The one thing I love about this salad is that it is not only quick and easy to make, but it’s also delicious and light. So you can eat as much as you like until you’re full. Well, maybe you wouldn’t make a meal out of it, but it’s a nice afternoon or even bed-time snack. And if you eat it before your meal, you’ll eat a lot less calories at the dinner table. Hence perfect for weight management.

Ingredients

  • 1 head iceberg lettuce, chopped
  • 1/2 English cucumber, finely diced
  • 1 tomato, finely diced
  • 1 cup olives, canned and sliced
  • 1 cup Camu cranberries, dried (or any other dried cranberry)
  • 2 cups marble cheese
  • 1/4 tsp Real Salt Sea Salt

Instructions

  • Measure all ingredients into a large bowl and toss well.
  • Add your favorite dressing, if desired, and serve immediately.
